One of the eating philosophies that my cooking style is based off of is the high fat, low carb diet, also know as the “ketogenic diet”. The ketogenic diet was developed in the 1920’s to treat epilepsy, and was very popular and commonly used with great success. However, with the start of saturated fat bashing and after the US government officially began giving dietary advice against fats in the 70’s, the diet was abandoned and only now has come back into favor as science has proven that saturated in fact does not cause heart disease and other life-threatening conditions. On the contrary, good, well-sourced fats are some of the healthiest foods one can consume. This includes butter, coconut oil and olive oil, which are the three primary fats and oils I work with.
The Ketogenic diet is what many popular low-carb high-fat diets of today are based off of – such as “paleo” and Atkins. The biggest issue however with nearly all diets is while one may work beautifully for one person, it very well may not for the next. Everyone is different, there is no perfect, cookie-cutter diet that will fit everyone perfectly, and I’m here to help you find out what you need in your meals diet to feel the best and be the healthiest you can possibly be.
